Ingredients
2 (8 ounces) cream cheese, softened
3/4 cup sugar
2 cups of 35% cream
1/2 cup of sugar
1 teaspoon of vanilla extract
1 box of graham crackers
2 pounds of fresh strawberries, diced
Preparation
Using an electtric mixer, whip cream cheese and sugar until smooth.
In a second bowl, whip the cream, until you have soft peaks.
Add the powdered sugar and vanilla. Whisk until the peaks are firm.
Fold the whiipped cream into the cream cheese mixture.
Place a single layer of graham crackers in the bottom of a 13 x 9 inch baking dish.
Spread half the whiipped cream mixture over the cookies.
Add half of the strawberries.
Repeat with another layer of cookies, cream and remaining strawberries.
Place in the refriigerator for 4 to 5 hours before serving
