🔸Durum bread:
500gr of T.45 flour
100 gr of fine semolina
300 g of lukewarm water
1tbsp salt
Add all the dry ingredients then 200 gr of water knead 6 min then add the rest gradually knead 5 min the dough will be slightly sticky for this oil your hands to knead it easier without sticking to the fingers form a ball place in a bowl cover with a towel and let stand 45 min then form balls to the gram of your choice I made small durum so I made 80 gr for each ball let stand again 25 min then lower very finely and put to leather in a frying pan over medium heat let them cook for 2 minutes no more, they must really be cooked lightly so that they are supple
🔸Boulgour:
350 gr of fine bulgur
1 tbsp of tomato paste
700 g of lukewarm water
1 bell pepper
2 onions
2 cloves of garlic
Spice salt pepper paprika
Brown the onion and chopped pepper in a drizzle of olive oil add a little water mix add the tbsp of tomato paste the spices mix and cook for 5 min then add the bulgur mix and cook for 5 min then add the 700 gr of water (for cooking, always add twice the volume of water as required for the bulgur) then put the lid on and simmer for 15 min at low heat thermostat 5
