 Hello my Pastry

 today I share with you my brioche burger recipe a cloud in the mouth with its softness and flavor but also for its crispy breaded fish and its slightly vinegared sauce with onions and capers, as well as its slice of cheddar all in a  steamed bread let yourself be tempted ⤵️


 🔹Recipe x12🥯


 500 gr of T.55 flour

 150gr of cornstarch

 2 tbsp of sugar

 10gr of dry baker's yeast

 250 gr of lukewarm milk

 2 tsp of salt

 80 gr of butter

 2 eggs


 🔹Levain:

 Dilute the yeast in the lukewarm milk with the sugar and let it rise for 10 min

 Add the flour the cornstarch the eggs the salt

 Knead 5 min then add the cold butter in pieces

 Knead for 5 min the dough will be smooth, supple and non-sticky

 Form a ball and place in a bowl covered with cellophane and a towel

 For a 1 hour shoot ⏱


 degas the dough for shaping see video by scrolling through the images

 After forming my burger of 120 gr each, let it rise for 45 min on a baking sheet covered with a towel

 Cooking 15/20 min at 175 degrees

 (optional 5 min steaming with varoma for those with the thermomix or over a saucepan of boiling water on a wire rack for more softness)


 🔹For the fillet

 I took the pavé de collin that you find at @auchan_france or in supermarkets I share the packaging with you as a permanent story course you just have to bread them in flour, the egg and the breadcrumbs and fry them in a bath  oil over medium heat 8 min


 Fish sauce:

 1 egg

 1 tsp of mustard

 25 gr of oil

 2 tbsp of parsley

 1 tbsp of chives

 1 shallot

 10 gr of caper

 15 gr of pickle

 Salt

 Pepper


 Cut your capers and shallot pickle into small pieces, set aside

 mayo: beat the egg mustard then add the oil the pepper the salt beat until whitening then add the parsley the chives and the ingredients reserve caper pickle ... mix and refrigerate
